5 instant pot easy dinner recipes for busy weeknights
save yourself some time and thinking with these easy instant pot recipes! I’ve made each of them myself and they are SO DELICIOUS and are time-savers as a mom of 3, especially when I’m in a pinch on a busy week night.
Spaghetti Bolognese by Olivia’s Cuisine – I LOVE bolognese. I’ve tried this recipe in the slow cooker, and then tried the instant pot version when I was short on time, and loved them both. Bolognese is a win for kids since they unanimously love pasta!
Instant Pot Pot Roast by Easy Dinner Ideas – This dish reminds me of the winter, but it can be made at any time of year for a quick, nutritious and filling meal option. I often pair this with no-knead peasant bread to add some fullness to the dish. It can also be paired with mashed potatoes – if you do this I would omit the potatoes in the actual roast.
Chicken & Mushroom Sauce by One Pot Recipes – This was one of my dad’s go-to recipes when he had us over on the weekends. Every time I make it, I think of him, the simplicity of the dish, yet how flavorful and easy it is to throw together! I found this copy-cat recipe and it’s to fie for.
Chuck Roast Chili by House of Yumm – I made this in a pinch when I intended to make a pot roast, but didn’t have potatoes on hand. This recipe doesn’t call for kidney beans (which I love in a chili!) but it was so dang good in a short amount of time. I had my in-laws over and it was a crowd pleaser. I added in some red chili flakes for some additional flavor and heat.

Savory Beef Tips – Ingredients
2 teaspoons olive oil
1 ½ lbs beef stew meat
2 Cloves of garlic crushed
1 yellow salt
1/3 cup dry red wine or beef broth
½ tsp oregano
¾ tsp dried thyme
1 envelope of Lipton Onion Soup mix
1 bay leaf
2 cups beef broth
2 tablespoon Worcestershire sauce
3 to 4 tablespoons cornstarch
1/4 cup cold water
chopped fresh parsley to garnish
1 package of egg noodles
Instructions: Select saute setting on a 6-qt. electric pressure cooker and adjust for medium heat. Add 2 teaspoons oil. Sprinkle beef with Sason Complete Brown meat in batches, adding oil as needed. Transfer meat to a bowl.
Add wine to the cooker, stirring to loosen browned bits. Return beef to cooker; add the bay leaf, onion mix, broth and Worcestershire sauce. Lock lid; close the pressure-release valve. Adjust to pressure-cook on high for 30 minutes. Quick-release pressure.
Select saute setting and adjust for low heat; bring the liquid to a boil. In a small bowl, mix cornstarch and water until smooth; gradually stir into beef mixture. Cook and stir until sauce is thickened 1-2 minutes. Serve with mashed potatoes or egg noodles
